Nutritious Breakfast Recipes to Get You Through the Day

The best part about the morning is making a nutritious breakfast that will help you power through a busy day at work or school. Breakfast is the most important meal of the day as it is the first meal you have after 8 to 10 hours of fasting. Skipping breakfast will only make you feel lethargic and cranky throughout the day- not a great look!

Here are some nutritious breakfast recipes to get you through the day. You can customize the ingredient list based on your likes or dislikes, but make sure to try at least one recipe tomorrow to kickstart your healthy journey!

1.   Blueberry Baked Oats

Ingredients

  • Almond milk: 500 ml
  • Porridge oats: 200 g
  • Baking powder: 1 tsp
  • Egg: 1, beaten
  • Ripe banana: 1, mashed
  • Vanilla extract: ½ tsp (optional)
  • Blueberries: 450 g and extra for serving
  • Whole almonds: 30 g, chopped roughly
  • Honey, yogurt, and milk for serving

Method

  • Preheat the oven to 200 Celsius.
  • In a big bowl, mix all the ingredients together.
  • In an ovenproof dish that is 2-liter deep, pour the mixture in. Put it in the oven for 30 minutes until the middle is cooked.
  • Serve with yogurt or milk and honey.
  • Top with blueberries.

2.   Breakfast Burrito

Ingredients

  • Chipotle paste: 1 tsp
  • Egg: 1
  • Rapeseed oil: 1 tsp
  • Kale: 50 g
  • Cherry tomatoes: 7, halved
  • Avocado: ½. sliced
  • Tortilla wrap: 1, wholemeal, warmed

Method

  • In a jug, whisk the egg, chipotle paste, and seasoning.
  • In a big frying pan, heat up the oil. Add in the tomatoes and kale once it has been heated properly.
  • Continue cooking until the tomatoes have become soft and the kale has wilted. Push these to one side of the pan.
  • In the other half, scramble the beaten egg.
  • Take the wrap and layer everything in the center of it. Top with avocado.
  • Wrap it up and serve immediately.

3.   Turmeric Latte

Ingredients

  • Almond milk: 350 ml
  • Ground turmeric: ¼ tsp
  • Ground cinnamon: ¼ tsp
  • Ground ginger: ¼ tsp
  • Vanilla extract: ½ tsp
  • Maple syrup: 1 tsp
  • Black pepper: To taste
  • Chocolate shavings: To taste

Method

  • Take a big saucepan.
  • Put all the ingredients in it and keep the heat low.
  • Whisk continuously with a milk frother.
  • Once the mixture is hot, pour it into two mugs.
  • Sprinkle some cinnamon and chocolate shavings on top, and serve.

4.   Microwave Shakshuka

Ingredients

  • Olive oil: 1 tbsp
  • Canned tomatoes: 200 ml
  • Garlic: 1 clove, sliced finely
  • Red pepper salsa: 1 tbsp
  • Egg: 1, medium
  • Chopped coriander: 1 tbsp
  • Pitta bread: To serve

Method

  • Take a microwave bowl and brush it with some oil.
  • Stir in the tomatoes, salsa, and garlic.
  • Create a dip in the middle of the bowl by tipping it.
  • Crack the egg, and using a sharp knife, prick the yolk.
  • Use a cling film to cover the bowl.
  • Microwave the bowl for 1 minute and then in bursts of 20 seconds till you see that the white part of the egg is no longer jingling.
  • Top with coriander.
  • Warm the pitta and serve.
